Turkey Singapore Style Noodles Recipe

These turkey Singapore style noodles are a quick and easy go to meal that tastes like it should be a staple in your weekly meal planning.

Contrary to their namesake, Singapore noodles originate from Cantonese style restaurants in Hong Kong and have become a popular cuisine in western countries with many restaurants offering the dish.

We’ve stir-fried lean ground turkey and shrimp with noodles, veggies, herbs and spices for a sweet and sour dish with an authentic flavor that is a healthier alternative to take out versions. It’s high volume, high protein, and low fat, helping to satisfy those cravings while keeping you full.

Ingredients:

• Low calorie oil spray

• 250g lean ground turkey

• 250g rice noodles

• 1 onion, sliced

• 2 garlic cloves, crushed

• 1-inch fresh ginger, grated

• 1 red chili, deseeded and thinly sliced

• 1 red pepper, sliced

• 2 tsp hot curry powder

• 1 tsp turmeric

• 100g beansprouts

• 4 tbsp soy sauce

• 4 spring onions, thinly sliced (separate greens and whites)

• 160g raw shrimp

• 2 eggs

• Fresh cilantro

Method:

  1. Heat a wok or large frying pan with low calorie oil spray.

  2. Fry off the ground turkey until cooked through and remove from the pan.

  3. Next, cook the rice noodles as per packet instructions, before draining and setting aside.

  4. Now, add the onions and garlic and cook for 2 minutes.

  5. Then add the ginger, chili and red pepper and cook for a further 2 minutes.

  6. Now sprinkle over the curry powder and turmeric and stir well as you let the spices cook off.

  7. Add the beansprouts, whites of the spring onions, soy sauce and shrimp and stir fry until the shrimp are cooked through.

  8. Next, push the shrimp to the side of the pan and crack two eggs into the wok, scrambling them until cooked.

  9. Return the ground turkey to the pan along with the noodles and stir fry until combined and hot.

  10. Serve your Singapore noodles topped with fresh cilantro and the greens of the spring onions.
